Perhaps the best short introduction is Patricia Aufderheide's, Documentary Film, A Very Short Introduction, Oxford 2007.
Also not mentioned so far, but essential, is Dai Vaughan, For Documentary, University of California Press, 1999 - an exceptional collection of essays by the one of the foremost film editors in the field.
