Unless there is a set of regulations that cover the organisation separately, the sole DPA issue, though not requirement, is to have a Data Retention Policy that codifies the different data you hold and the retention period, and a Data Destruction Policy (note the word "destruction") that deals with the obliteration of obsolete data.

As others have pointed out, an email is simply data. It is not special per se.  It is the content that may be special, not the vehicle.
