Dear Sylvia Kate Clark discussed penning elbow in sheep in her thesis and she also wrote a chapter on evidence for it in Winchester sheep for a forthcoming book on the animal and plant remains from Medieval Winchester. The book is in press (the proofs are on my desk). I could send the text of her paper if that would be helpful.
