As promised, I finally found my source for canonization records.

Fontaninus, Giusto. Codex constitutionum quas summi pontifices ediderunt in solemni canonizatione sanctorum a Johanne XV ad Benedictum XIII sive ab A.D. 993. ad A.D. 1729, Manuscripta, microfilms of rare and out-of-print books: list 26, no.31. Rome: ex typographia Rev. Camerae apostolicae, 1729.

I was able to get it on microfilm and printed the entire thing out.  But these are only papal canonizations. Depending on your focus, you might well want to/be able to consider the whole host of "saints" of the period that never made it to the end.    I'd still be starting with Vauchez and Goodich, though.

One might look at Voragine's The Golden Legend; compiled in the mid 13th c, it is a collection of saints lives from many previous centuries. It's prob. not easy to determine when any one life is originally written from that text; but you could find confessor saints that interest you there and then dig away at finding the original vitae.

I might suggest, rather than looking at standard vitae, you have a look at sermons written specifically as model sermons -- that is, sermons composed in such a way that preachers could customize and use them in preaching for specific feasts in their churches or dioceses. In the case of interest to you, you would find, for example, in model sermons intended to be preached on the feast of confessors, the qualities that makes a saintly confessor, um, saintly and a confessor!

By looking at model sermons, you get an idea of approaches to confessor saints that the writer believed to be characteristic. The sermons are, compared to most vitae, shorter and definitely much more to the point of your interest.
