Isn't defying Hollywood conventions like going to the zoo and seeing all of
the non-elephants?

I disagree....they don't "defy" Hollywood
conventions unless you are
reading a manual of conventional H'wood
techniques from the 30s and 40s.
David Bordwell has discussed this very
extensively in several places:
his Narration in the Fictional Film,
in his book on Hong Kong cinema,
and in his essay "Intensified
Continuity" which discusses how
contemporary H'wood has evolved
(rather than "defied") in style.
(Think Matrix action
sequences.)
And besides, Woo makes film in Hollywood
nowadays....
