I have a VMware ESX 3 machine running Apache2 with mod_jk and mod_ldapnz with Tomcat 6. It has an IDP currently configured for Testshib as that’s as far as I’ve got.
The only possible wrinkle is it’s based on SUSE Linux Enterprise so you’d need a Linux license to use it, but other then that I’ve no problem making it available. I’d need a bit of time to make it ‘exportable’ though.

and working in a vmware virtual machine.
