I like cold water maceration for smaller animals.  I skin them or skin and gut them first (if you are doing birds, make sure to remove all feathers) and then put them in jars of room temperature water and let them sit for as long as it takes, changing the water every few weeks.

Also, it has been suggested that I line a burial pit with straw/hay to help build up the temperature, which I shall try. I do already use leaf mould along with various ‘invertebrate processors’.
 
I’m also experimenting with bacteria that I use for my tropical fish tanks, this bacteria is added to the water to help process the fish poo, any dead fish or invertebrates and dead plant material; in this warmer weather it does seem to help clean up the bones a bit quicker.
