I agree that it would be an enormously difficult task and, consequenly, of great scholarly importance and interest.
 
The question of the standards of exlusion should actually be an explicit theme in the project of writing the history. The reader should be invited, throughout the work, to join you in the enormity and responsibility that is involved in excluding some works and including others in a history of wisdom. Writing the history consitutes a judgement about what is wisdom and that judgement is itself historically contingent.
 
If done well, it would be a fascinating book.
