Dear Kathy,
I'm looking at comparative thickness of the cortex of long bones, so I
would also be very interested if anyone else has anything on this. I have
a couple of references here, not seen anything on bovids I'm sorry:

Skedros, JG, Sybrowsky, CL, Parry, TR and Bloebaum, RD (2003) Regional
differences in cortical bone organization and microdamage prevalence in
Rocky Mountain mule deer. The Anatomical Record Part A 274A:837-850.

Davis, SJM (2000) The effect of castration and age on the development of
the Shetland sheep skeleton and a metric comparison between bones of
males, females and castrates. Journal of Archaeological Science 27:373-390

Horwitz, LK and Smith, P (1990) A radiogrpahic study of th extent of
variation in cortical bone thickness in Soay sheep. Journal of
Archaeological Science 17:655-664.

There is HEAPS on human bones if that is any good to you for comparison.

I have a couple of figures on sheep (and kangaroo) femoral thickness from
my own small study, if this is the sort of thing you are after.
