There were some crustacean remains in the faunal sample I analyzed from a Late/Terminal Classic Maya deposit (~900AD) at Lagartero, Mexico. It's a site in south-west Chiapas on the border with Guatemala, but is connected to the Pacific coastal zone by a river. Unfortunately, the crustacean and mollusc remains were collected separately from the fauna back in 1976, so I only came across a few specimens by accident.

Hope that helps and good luck!
