Dear Emanuelle,

there is a disarticulation scheme for Equus burchelli (should not differ too much from
the donkey) in:
Hill & Behrensmeyer 1984, Disarticulation patterns of some modern East African
mammals, Paleobiology 10(3): 366-376.
A somewhat different scheme is provided by Méniel 1992, Les sacrifice d'animaux
chez les Gaulois, for the horse.
the main difference: metapodials and phalanges ... do they appear as "natural" units?
I recall some later taphonomic litterature, indicating that the disarticulation sequence
may be affected by environment, predators, temperature(mummification),partial
burial,...

all the best
