Yes there is a way - just not within the OS and it's not free.

As long as the students computer is running 10.2 + then go to

MightMouse appears to allow you to copy the image to your desktop - drag
image of mouse to edit onto the desktop - open this image in something
like photoshop or graphic converter etc - change the colours and save
the mouse image - then drag back into the system preference of
MightyMouse and the mouse will be changed. 
You can also increase the size of the Mouse image within the System
Preference. 

Hope this is something towards what was required.
