I got the specs wrong for the iPod microphone adapter made by Belkin. It
does record with a resolution of 16 bits; not 8 bits as I stated. Thanks to
Tom Speitel for pointing this out.

The Belkin device allows the iPod to record uncompressed audio with a
resolution of 16 bits and a sample rate of 8kHz. The iTalk made by Griffin
is similar. I wonder if these specs aren't more a feature of the iPod than
the microphone adapters. The Giffin site states:
Recorded File Specs (iPod Specified): 8kHz, 16 bit mono WAV files
