Char-grill
To cook food in a ridged griddle pan until it has slightly blackened,
charred lines running across it. The ridges or grooves in a good griddle
pan should be straight and quite deep so that the food to be cooked
(usually meat, fish, vegetables or fruit) can sit above the fat in the pan.
