There is a risk of sensitisation to flour, storage mites and alpha amylase,an enzyme used in baking. Probably the most at risk are the people who toss flour around in mixing dough. I would recommend the usual surveillance as guided by Guidance note MS 45 on Occupational Asthma, on commencement 6/52, and then I think it is at 3/12 (can't find my copy to confirm)After that annually. It might be worth considering smokers and those with a history of atopy to be at higher risk. and doing it 6 monthly.
