The majority of policies, I guess, will be the usual generic stuff. May I
suggest the British Poultry Council who has produced specific codes of
practice for a number of poultry specific hazards. If memory serves:

ULD in poultry processing
Use of bandsaws
Use of automated evisceration
One related to gizzard processing
And a fifth I can't recall.

(I don't think the codes are posted there, but you should be able to contact
them).
