Voice recognition software (VRS) must be trained, and if you want interviews transcribed by using VRS the interviewed person should/must train the VRS. This is often not possible, so what you can do is to listen to the interview by headphones and read out loud to your VRS. Another solution is not to tanscribe the text at all but working with the sound files, several software packages do support this.
