Might the valuation also refer to the value of the glebe -- the "endowment"
of the church (which could be anything from a single field and garden the
priest was expected to work himself all the way up to considerable estates),
income from which went 100% to the upkeep of the church?  I don't know if
this would be calculated separately from tithes, though.

good question(s).

on the off chance that my understanding is not accurate (sometimes happens,
as
one drops the occasional Hammer here and there), here's what i've been going
on for several years:

it's a question of the Revenue from Tithes --all sorts of tithes on all
sorts
of (mostly) agricultural produce.

with, perhaps, other income (such as rents due to that particular church)
thrown in.

in the French world there were/are surveys of the "Pouillés" --a sort of
census of all the parishes of a diocese.

many of these have been published, either as stand-alone publications, or as
part of cartularies, or in this quite useful series:

Author:  Académie des inscriptions & belles-lettres (France)

Title:  Recueil des historiens de la France : pouillés / publié par
l'Académie des inscriptions et belles-lettres.

Paris: Imprimerie nationale, 1903-

Incomplete contents:  t. 1. Pouillés de la province de Lyon

these guys are a mine of information, not just for finding out the "value"
of
a church, but also for other things, suchlike:

--the Latin name of a place, or, via reverse engineering, the Modern name of
a
place you only have the Latin for (there's an index in each volume listing
both names);

--in what subdivision(s) of the Diocese (usually an Archdeaconry and then a
"rural" Deanery) the place was to be found;

--if it's a question of a more or less minor church, to "whom" the church
"belonged" (i.e., by the late m.a., the name of the ecclesiastical
institution
who/which could name the "curé," or Prior, or whatever;

--(in the later ones) how many "souls" were in the parish;

a real treasure trove of a Reference Source.

it looks like most all of France has been published in this series --i have
no
idea what the state of things in less civilised parts of Europe might be.

btw, the Academie publication *might* be available on-line (more or less)
via
the quite marvelous "Gallica" site of the Bibliotheque Nationale
(http://gallica.bnf.fr/ , slow and frustrating as hell to use, but worth the
trouble if you've not got a good library close by).
