There is an article in "Archäologie in Deutschland" (1/2002, 56-61)
concerned with "Gladiators in Campania" which is giving a couple of hints
towards the use of animals in Roman games and some pictures of
wallpaintings.
While discussing the subject with a colleague she remembered a german
TV-documentation a couple of weeks ago where recent animal bone finds from
the colloseum in Rome were shown. Unfortunately I can give no exact
reference, but maybe this is worth researching.
