Re Pope Gregory: his prohibition (AD 732) against
consumption of horse flesh didn't stamp it out
completely, at least in England, since the English
Legatine synods of AD 786 opposed it as a pagan
practice (Levison (1946) England and the Continent in
the Eighth Century).

Doesn't this position of the medieval Christians
reflect the influence of classical civilizations?
According to Simoons, the eating of horseflesh was not
considered acceptable under normal cicumstances by
either Greeks or Romans.
