If by including the employee name it is likely to cause that person
harm/distress by revealing the employee's name then (do not disclose).  If
it would be reasonable for the data subject to know the identity of a person
writing a letter anyway either that they had received a letter from that
person and would assume that person was perhaps communicating with others in
the context of any issues then I would assume it would be reasonable to
disclose.
I may be wrong and am sure you will correct me if I am.
