Dear Carlos,
I don't know of any iconographic studies of the theme, offhand, but 
it occurs as early as the 6th or 7th century on the Riha and Stuma 
patens (the Riha paten is in the Dumbarton Oaks collection in 
Washington, D.C.), and it can be traced from at least the 11th 
century in church decoration, e.g.: Hagia Sophia, Kiev, and Hagia 
Sophia, Ochrid.  Thereafter, it occurred quite commonly through 
Greece and the Balkans.  I'll have a look to see if I can come up 
with any specific written studies.
