An interesting study of Peter the Chanter's writings on prayer is contained in Richard Trexler's _The Christian at Prayer: An Illustrated Prayer Manual Attributed to Peter the Chanter (d. 1197). Trexler has a good introduction to his study. The material by J. C. Schmitt , previously cited by others, is also excellent. The materials I have used appear in two sources. One is "Gestures" volume one of History and Anthropology_, published by Harwood Academic Pub. in 1984. In this Schmitt has an orticle on the prayer gestures of St. Dominic. Another of his works is "Gestus-Gesticulatio: Contribution a ''Etude du Vocabulaire Latin Medieval des Gestes" in La Lexicographie du Latin Medieval et Ses Raports avec les Recherches Actuelles sur la Civilisation du Moyen Age, pp. 377-90.
You may find that these will give background material and sources that will more directly answer your question.
