I still use:
Dunnicliff, John, Geotechnical Instrumentation for Monitoring Field
Performance, John Wiley & Sons, 1988, New York
on a regular basis as a basic reference.
With some of the advances in data processing in the past decade, this may be
getting a little behind the times.
Dunnicliff also writes a regular column in the Geotechnical News on this
subject, which you might find useful and more up to date.
The US Army Corps of Engineers also has a couple of publications available,
on-line (*.pdf files) at

<http://www.usace.army.mil/inet/usace-docs/eng-manuals/cecw.htm> although I
don't use this very often, and don't know how old they are.
The various manufacturers are probably as good a source of current
information as you will find.
I would be interested in hearing what others are using, as well.
