I can report successful running of WinBUGS under VMware - it was very
stable, as you would expect from WinBUGS (unlike other software, WinBUGS
never seems to stray outside it's address space!).
Apart from occasional VMware crashes (I think caused by a guest disk
problem, which I have now fixed), I have had no problems. I have never
used Wine seriously although I believe it is a lot better now.
Best of all of course would be for the WinBUGS super-stable coding (wrt
old-BUGS) to be ported to Linux anyway and I gather this is in hand.
Coupled with R-CODA, (or BOA) of course for the graphics.
