The Deutsches Klingen Museum in Solingen Germany has several early
examples of bone handled knives.
"Knochenarbeit" (Bone Work) a publication of the Saalburgmuseum,
Bad Homburg v.d.h, ISBN 3-931267-03-2 has examples of bone handled knives
and swords (its in German).
"Knives and Scabbards", Museum of London, ISBN 0-11-290440-8 lists 10
knives as having bone handles with scale drawings and descriptions
of the knives.
"Divers Arts", Theophilus, (circa 1120) mentions bone working though
there is some confusion of bone, ivory and antler in the text.
