If you mean Human teeth or bone look into Tibetan/Nepal ceremonial knives.
If you mean animal try North American Indian. There was always a trade in
bone handles, its a good material and available.
In Medieval England there was a great use of bone for handles -- quite
common for daily use knives. The book is "Knives and Scabbards" published
about 1992 or so. I'm sure some one on the list has a copy (mine is on
loan) and can get you some info (ISBN, author, Pub)
