Regarding what you did to build up the practice before he/she
joins, what business is it of the incoming (additional) partner?
The new partner should get paid for whatever is is they
are doing, not be penalised for what you did before.

As noted above, I don't think it matters to the incoming
partner what went on before. They weren't involved and
should not (IMNSVHO) be made to pay for it.
