GWS has been subject to much attention here across the pond and the DOD
has spent quite a bit on research. AFAIK there is no scientific basis
for GWS existing as a single distinct entity, let alone having a
well-defined cause(s). Without knowing what I was treating or why, I too
would hesitate to condemn anyone to such a regimen for years. Patient
might try instead a program of self-flagellation, ritual purification or
even regular church attendance on the basis that any of the above would
be as easily justified, less inconvenient, less expensive and probably
more efficacious than the diet :->
OTOH, you might find the name of the 'professor someone', do a lit
search and see what - if anything - he has done credibly in the field.
(Might even find a valid answer and leave me with egg on my face :-o ).
If nothing, drop him a note recommending he undertake a gluten-free diet
himself. Or self-flagellation ;->>
