You may get a variety of answers on this. My suggestion is the TYPE (or
RESOURCE TYPE) element. However, to use this properly for audience type,
one would need to define a qualifier (again, in my view).
For what it's worth, the US/MARC format (in field 006 position 5, or field
008 position 22) defines some audience type codes as follows:

A one-character code that indicates the audience for which the item is
intended.
# - Unknown or not specified
a - Preschool
b - Primary
c - Elementary and junior high
d - Secondary (senior high)
e - Adult
f - Specialized
g - General
j - Juvenile
