I'll contribute one solution I haven't seen mentioned yet --
What we did to help manage the switch from EZProxy to OpenAthens was to keep EZProxy, but to put it 'behind' OpenAthens as a custom resource. The benefit was that old ezproxied links (mainly from faculty copying course material and not updating links) continued to work, and automatically directed the user through OpenAthens, giving us time to work with our Canvas (LMS) admins to pull links lists and reach out to specific faculty.
Moreover, we still have a couple small-publisher resources that we couldn't get to work with OpenAthens, so we use EZProxy for them-- But to the user, the experience is identical to the OpenAthens sign-in experience for all the other library resources, and they also get the benefits of sso. We also set up OpenAthens with some of our systems such as our study room login (Springshare LibAuth) and OCLC's Tipasa ILL system, so I would say it's worked really well from that perspective, too.
The main disadvantage of integrating EZProxy with OpenAthens is that OpenAthens statistics show EZProxy usage, rather than whatever specific resource the user is actually accessing.
I can share details on how to do this, if this is the direction you end up choosing to go.
