Hi,
This link might help a bit
https://bids-specification.readthedocs.io/en/stable/04-modality-specific-files/01-magnetic-resonance-imaging-data.html#in-plane-spatial-encoding
The letters I, j, k correspond to the axes specified in the nifti file. The best way to know which direction is indeed anterior to posterior is to look at the data for each PE direction.
You can see some examples of PE directions and the distortions here to get a feel for what to expect.

Subject: [FSL] phase encoding
Dear FSL experts,
I would like to ask you a question regarding the phase encoding. I have run dcm2niix to see the phase encoding of my images from two different folders with b100. Images from the first folder have a phase encoding "J" while those from the second folder have been acquired with phase encoding "-J". So, my question is: does J stand for the Anterior phase encoding and -J for the Posterior phase encoding?
I cannot find anyway a clear indication for i,-i, j,-j, k,-k therefore I would really need some help with this. I am a student working on my internship and do not have experience with mri images.
Thank you in advance for your time and availability
Best regards,
Marta De Franceschi
