Dear Andrade,
The error indicates that 'mex' is not available from your system path: see:

That said, you shouldn't have to recompile the MEX files and I assume
this is due to some new security settings for macOS Catalina:

Could you therefore try running the following from a terminal (assuming
you haven't deleted the MEX files before your compilation attempt):
find . -name "*.mexmaci64" -exec xattr -d com.apple.quarantine {} \;
