Look at Jeremy McClancy, Anthropology in the Public Sector. Deals with the UK, talks about what practitioners (ie, non-academics) do.
I have taught a range of courses and workshops in the US and UK on practicing anthropology, and if you'd like to tell me a bit more about how you want to set up your course, get in touch, I am happy to talk with you.

Subject: Advice on literature, practicing anthropology in Europe
Hello list!
I am teaching a course in anthropology and working life and am looking for literature on practicing/applied anthropology in the context of Europe. All the literature I have come across so far has been on the US context. As I am teaching in Finland it would be more relevant to use literature that is closer to our own context. I have a few articles by Dan Podjed and colleagues, but would appreciate further advice on articles or books dealing with this subject. Perhaps someone here has been teaching a similar course?
Best,
Susanne Ådahl, PhD
