This is most likely related to FSLeyes not being available for Linux Mint (tar no available). It is built for specific OSes/configurations.
You won’t be able to use a prebuilt FSLeyes on Linux Mint (but see these instructions: https://fsl.fmrib.ox.ac.uk/fsl/fslwiki/FSLeyes)
You do need to finish your shell setup though since the installer exited early due to the error.
Put this in EITHER your ~/.bashrc or ~/.bash_profile files (make sure FSLDIR points to where you installed FSL):
FSLDIR=/usr/local/fsl
. ${FSLDIR}/etc/fslconf/fsl.sh
PATH=${FSLDIR}/bin:${PATH}
export FSLDIR PATH
