It might be worth looking at EquatIO. Although I have not used it myself, I know people who teach/support Maths have found it very helpful. EquatIO for Google is free for teachers and students, but there is also a Premier version with many more features which is paid for.

I'm Lawrie and work at Jisc. "I work with a boy who has Cerebral Palsy in a main stream secondary school. He uses a laptop (with touch screen and full keyboard) to record most of his work however is currently struggling to record his maths work as he finds it hard to control a pencil/ruler and MS Office is too fiddly for him to locate mathematical symbols. Do you know of an app that can be used to record this/has easy access to mathematical symbols?"
