I completely agree that even if you provide really clear style guidelines for authors before submission you will still need someone to cast their eye over the whole thing to ensure consistency.
We tried a print on demand model for publication a few years ago and didn't find it very successful because the books didn't turn out to be very affordable. Also we found that people are reluctant to buy a book if they haven't seen it 'in real life' and aren't sure of the quality. You will probably find that you need to sell to a wider audience than the contributors themselves to have a chance of making any money back. So you need to think about how to make it an appealing product (design, layout, photography?), so that people actually bother to go online and purchase it. In short, it's possibly not as straightforward an idea as it appears!
