I am sure many AQ officers get dragged into kitchen odour assessments/planning applications. This may be of interest (forwarded by a colleague).

Amendment to Defra’s 2005 Guidance on the Control of Odour and Noise from Commercial Kitchen Exhaust Systems Document – now available from EMAQ+ Odour and Noise pollution

Problems associated with nuisance odour and noise emissions from commercial kitchen exhausts are very common, particularly in urban areas where housing may be adjacent to or even immediately above catering premises. These premises might include pubs, clubs, restaurants and takeaways that may be open until the early hours of the morning.

Local Authorities, planning consultants, commercial kitchen designers and commercial kitchen operators have a vested interest in ensuring that appropriate equipment and techniques are employed to minimise the impact of these activities. Until September 2017, stakeholders were able to rely on the original version of the “Control of Odour and Noise from Commercial Kitchen Exhaust Systems” report. However, pending a review, Defra subsequently withdrew the 2005 report due to the guidance being out of date.

Updated industry guidance

In consultation with industry stakeholders, including kitchen engineering specialists, manufacturers, and EHO’s (Environmental Health Officers), Ricardo’s EMAQ+ team has updated Defra’s 2005 ‘Guidance on the Control of Odour and Noise from Commercial Kitchen Exhaust Systems’, in-line with industry best practice standards to ensure clear guidance to the regulation process remains available.

This amendment provides up to date information on industry best practice techniques for the minimisation of odour and noise nuisance from kitchen exhaust systems.

The amendment provides:

• Relies on the original report structure and text as far as possible. The original document focused around English interpretation of relevant laws and regulations. This has continued in the amendment, however principles embodied in this document could be employed elsewhere

• Removes material in the original report that was out of date and could not be replicated with more recent data

• Updated guidance on odour and noise management based on the latest industry legislation and technical material

• Consideration of wider changes in cooking methods (e.g. move toward solid fuel cooking appliances) and the implications of this regarding
adhering to existing legislation

• Includes additional ‘case study’ material to support and reinforce the use of the amended guidance.

Who is it for?

• Local Authority Planning Officers dealing with application for new or extended commercial kitchens

• Local Authority Environmental Health Practitioners dealing with commercial kitchens subject to potential nuisance situations

If you wish to purchase this document, the cost is £25 to members and £50 to non-members, we will be taking credit card payments only. Please contact [log in to unmask] if you wish to purchase a copy with your card details.
