Dear Georgios,
the extraction of mean values inside a cluster can be done using the "Display Surface Results" tool. There are different data cursor functions implemented and the extracted values per subject are available as variable "y" at the Matlab command line.
The .dat files that you mentioned are related to the .gii files. This is a special gifti format where the .gii file only contains the header. However, these files are also readable with the gifti function inside SPM12.
