Unfortunately, as far as I know there is no easy way within the fslview GUI to do this. You can do it by creating your own colour map, but it is a bit of a hassle - have a look at the *.lut files in $FSLDIR/etc/luts for some examples.
The easy alternative would be to create a temporary image that reorders the negative values. It’s not very elegant, but probably much quicker if you just need to make one or two figures.
