Dear Harry,
The AICHA toolbox is available in a format compatible with SPM12's
spm_atlas so you can do something like the following to create a binary
mask of all regions whose labels contain the term "Fusiform":
VM = spm_atlas('mask','AICHA','Fusiform');
VM = spm_write_vol(VM,VM.dat);
spm_image('display','AICHA_mask.nii');
(provided you copied AICHA.nii and AICHA.xml in an spm12/atlas directory).
If you want to extract data from this mask, you can use spm_summarise.
