Hi JF,
It is possible to combine surfaces: see the command palm_hemimerge. However, this will only work if the data in the CIFTI file match perfectly the geometry of the surfaces. Depending on where/how the surfaces were obtained, it may not work.
I think you can still use the examples in the webpage as starting point, just remove the options related to volume from -cifti-separate.
