Hi Tom,
For use on Windows I would recommend the Open Broadcaster Software, which is also widely used among youtubers doing "Let's Plays" or reviewing games. It's very performative and can be used for live broadcasting as well without crashing. It might not offer a state-of-the-art user interface, but you will get used to it relatively quickly, plus I would bet there is at least one helpful YouTube tutorial out there!
The VLC software doesn't offer many options during the screening, e.g. making actions such as clicks visible, but the quality is okay. I would however, recommend a software that allows you to make things visible without you having to do too much editing as you are planning to do how-to-videos.
From the other programs mentioned so far I only know Camtasia, which is not for free, but offers a very sleek nice, easy-to-use design. They also have trial downloads so if you are open for an evaluation (or are ready to make the videos in a short time frame) this is a good option, too.
