you can use the following commands:
hdr=spm_dicom_headers(spm_select); % select dicom file
hdr{1}.EchoTime
hdr{1}.FlipAngle
or with nii file
V=spm_vol(spm_select); % select converted nii file f*.nii
V.descrip
