I don't have experience with an adjustable i-pad holder like this, but have found that putting the ipad in a security case with a cable is good for accessibility as people can move it & share looking at it at different angles.
For example, a wheelchair user might prefer to have the ipad on their lap for ease of use.
We have also used an ipad 'chained' like this to a set of shelves, with tiny tots to tall adults able to have it at a height suitable for them without complicated adjusting of a stand needed.

Subject: [MCG] Accessible i-pad holder
I've been looking about for a floor/wall mounted i-pad holder that can adjust its height - this is the best i've come across:

any other thoughts ?
