I hope you are well, it's been a while! In any case, with regards to what you were asking, sometimes the reading can become overwhelming, therefore I'd suggest you build your way in, as there are many different avenues. I think my interest comes from an ethnicity lens of cultural difference and the following are recommendations from this interest
I think "Aliens and Alienists" is a phenomenal classic text and a great call by Deborah, I think Suman Fernando writes quite well, and has a broad approach to many things (and I'd probably start here) . Pittu Laugani's book 'cross-cultural psychology' is a great text also. Lowenthal has a simple text on mental health and religion, which I've found handy, and I'll try and dig out the two texts on Islam, and Christianity that focus on mental health.
If you are thinking about social inequalities and ethnic differences, you can also check out the Karlsen and Nazroo work, its a bit old now, but still relevant.
If you were looking for specific therapeutic approaches, I've found more in the classical approaches (individual and or group psychoanalysis/psychodynamic therapy) with Farhad Dalal and Foulkes would be a good place to start. I'd also recommend the 'Clinical Psychology: 'Race' and Culture Handbook, but I'd be biased somewhat....as a few close colleagues were involved.
For a more political look at 'race' then Franz Fanon writes well, but can be a bit dense in parts.
