Dear Matthieu,
the relevant C code is in spm_vol_utils.c (functions RESAMPLE_D_1 and
RESAMPLE_D_POLY).
I guess the closest MATLAB function in the image processing toolbox is
"imgradientxy" (for 2D images). See also "gradient".
