I think my favourite advice about describing bindings I ever heard (I think it might have been courtesy of Nicholas Pickwoad) has to be:
"It's better to be vague and correct than to be precise and wrong".

Thank you everybody for the responses re: binding description.
The information most of you have mentioned is the way we describe bindings at Eton too. However, I found that with the schoolbooks, which have quite simple and often very used bindings, there is not much to describe in terms of decoration, colour and the like. You can quite often see the structure though, e.g. material for sewing supports, the actual number of sewing supports as opposed to the number of raised bands, boards' material. I personally find these bindings more interesting than the gold tooled fancy ones, as they allow for a 'Pickwoadian' approach.
As to the terms to describe bindings Ligatus 'Language of bindings' project http://www.ligatus.org.uk/lob/ has been going on for some time now, but as far as I can tell there are no usable results yet?
