The 2015 Geostat Summer School is being held in Lancaster, UK in August. It is a residential week of practical and theoretical sessions, based round the R-spatial tools but extending into other Open Source GIS applications when needed. It is intended for PhD students and researchers who work with spatial and spatio-temporal data in any field.
To give a flavour of the course, the list of lecturers and topics is currently:

Markus Neteler: GRASS GIS 7 tutorial

Chris Brunsdon: Geographically weighted regression: GWmodel package
Patrick E. Brown: Geostatistical modelling with geostatsp
Edith Gabriel: Space-time point process data: analysis and simulation using the R package stpp
Barry Rowlingson: QGIS vs R - mapping shootout
Tomislav Hengl: Automated geostatistics and visualization in 3D+T: GSIF and plotKML packages
The course is being hosted by the Lancaster Medical School on the university campus.
