I don't know anything about the Mac, but certainly in Linux the
standard polytonic Greek keyboard[0] doesn't require double-key
combinations, though you do have to type the compound characters
before the character they modify.
I would be very suprised if there wasn't a similar option for the
Mac (but others here will know better than me on that score).
